В статье рассматриваются исторические и современные особенности развития пекарен и мини-пекарен как сегмента хлебопекарной отрасли в региональном контексте на примере Республики Татарстан. Рассмотрены основные статистические показатели развития хлебобулочных изделий в регионе. Обосновывается значение пекарен и мини-пекарен для развития территориальной экономики, занятости и продовольственной безопасности. Показано, что устойчивое присутствие таких предприятий связано с ежедневным спросом, локальными цепочками поставок и гибкими форматами организации производства. Внимание уделено рыночной структуре сектора и инвестиционным моделям, включая франчайзинг, собственные вложения, банковское кредитование и краудлендинг, а также их соотнесению с плотностью конкуренции и территориальной дифференциацией. Проанализированы социально-экономические эффекты, институциональные ограничения, логистические факторы и кадровые барьеры, влияющие на развитие сектора в агломерациях и периферийных районах. В статье предложена авторская модель, отражающая влияние пекарен и мини-пекарен на региональное экономическое развитие Республики Татарстан посредством взаимосвязи инвестиционных решений, пространственного распределения и социально-экономических эффектов. Научная новизна исследования заключается в интеграции рыночных, институциональных и инвестиционных характеристик рынка хлебобулочных изделий, что позволяет рассматривать пекарни и мини-пекарни в качестве устойчивого элемента региональной экономики.
The article examines the historical and modern features of the development of bakeries and mini-bakeries as a segment of the bakery industry in a regional context using the example of the Republic of Tatarstan. The main statistical indicators of the development of bakery products in the region are considered. The importance of bakeries and mini-bakeries for the development of the territorial economy, employment and food security is substantiated. It is shown that the steady presence of such enterprises is associated with daily demand, local supply chains and flexible production organization formats. Attention is paid to the market structure of the sector and investment models, including franchising, own investments, bank lending and crowdlanding, as well as their correlation with the density of competition and territorial differentiation. The socio-economic effects, institutional constraints, logistical factors and personnel barriers affecting the development of the sector in agglomerations and peripheral areas are analyzed. The article proposes an author's model reflecting the influence of bakeries and mini-bakeries on the regional economic development of the Republic of Tatarstan through the interrelation of investment decisions, spatial distribution and socio-economic effects. The scientific novelty of the research lies in the integration of market, institutional and investment characteristics of the bakery market, which makes it possible to consider bakeries and mini-bakeries as a sustainable element of the regional economy.
